I've had all clad d5 14" and it's amazing. I'd go stainless over carbon steel because I use mine for acidic foods, and I don't want to worry about seasoning. If proper 'wok hei' is your goal, all clad won't get you there -- but then again, neither will a flat-bottomed wok on a home stove.

Carbon steel wok heat requirements
Carbon steel woks need high heat. Your stove should be on its highest setting. If your wok is smoking, that's good -- you want it screaming hot before adding oil and food. If you can't get that on your stove, you won't get good results.

Challenges with carbon steel woks
I find carbon steel woks to be a pain. Seasoning never stays, food sticks unless I use a ton of oil, and I can't cook anything acidic. I just use my cast iron skillet for stir fry now.

Cuisinart stainless steel stir fry pan review
I have this Cuisinart 14" SS pan. It works fine for stir fry, but it's heavy. The helper handle is useful. I mostly use it for deep frying now. For stir fry, I prefer my carbon steel wok.

School of Wok quality issue
School of Wok woks are junk. Thin metal, terrible finish, and the handle got loose after a few uses. Get a Wok Shop or Joyce Chen instead.
